Our smallholding specialises in rare and traditional breeds, which we raise in non-intensive conditions. Since we started keeping pigs in 2006, we have tried several breeds, notably Large Black, Large White, Tamworth and Saddleback, before settling on Gloucestershire Old Spots and, when we can get them, Oxford Sandy and Black. These pigs combine the best qualities of temperament, looks, hardiness and, not forgetting, taste! It is sometimes said that Gloucestershire Old Spot make the finest sausages and, judging from comments we have had from happy customers
